Fattoush

Hummus
It's a texture thing. Silky hummus topped with hot lamb or beef, scooped up with freshly-baked flat bread. Just yum.
Fatteh
The Middle East's answer to Nachos (unsure whether the Mexicans or Arabians got to the table first). The eggplant Fatteh we sampled was incredibly moreish.
Galayet
There are quite a few varieties of this basic recipe. Just add eggs to create shakshuka. We even had galayet served with a can of tuna!
Maqluba
I can only describe this as an up-side down one-pot rice cake. Great for using up seasonal vegetables and the odd cut of casserole meat.
Fukharat
The real joy in this dish is the sweet, sauteed onion that soaks up the zingy flavour of the sumac.
